Put the empty tubpint (or your pan) on the kitchen scale and press zero. Add each ingredient until the scale shows the number on the right.
Mix everything in one big bowl, then divide it evenly between 2 tubspints.
Steps
- Thaw 350 g frozen mixed berries580 ml frozen mixed berries2½ cups frozen mixed berries525 g frozen mixed berries880 ml frozen mixed berries3⅔ cups frozen mixed berries in a bowl for about 1 hour, or for a few minutes on the microwave defrost setting.
- Blend the berries and their juice with 75 g caster or granulated sugar90 ml caster or granulated sugar¼ cup + 2 tbsp granulated sugar115 g caster or granulated sugar130 ml caster or granulated sugar½ cup + 1 tbsp granulated sugar, 50 ml water50 ml water3½ tbsp water75 ml water75 ml water⅓ cup water and 15 ml fresh lemon juice1 tbsp fresh lemon juice1 tbsp fresh lemon juice25 ml fresh lemon juice1½ tbsp fresh lemon juice1½ tbsp fresh lemon juice until smooth.
- Press the purée through a fine sieve to remove the seeds. Scrape the purée from under the sieve too.
- Pour the base into an empty tubpint, up to the max fill line. Put the lid on and freeze on a level shelf for 24 hours.
- Take the lid off, set the tubpint in the outer bowl and lock it into the machine. Run Sorbet.
- If it looks crumbly or powdery, add 15 ml water1 tbsp water1 tbsp water25 ml water1½ tbsp water1½ tbsp water and run Re-spin.
To serve: Top with a handful of fresh berries.
Tips
- Any mix works. Bags heavy on blackberries and raspberries give the deepest color.
- Skip the sieve if you do not mind seeds; the sorbet will be a little more rustic.
- Leftovers: smooth the top flat, refreeze, then run the program again before serving.

Why it works
Mixed berries bring pectin for body, and sugar at about 20% of the mix keeps the tubpint soft. Lemon juice sharpens the berry flavor, which freezing tends to mute.
