To serve: Top each scoop with a whole cherry and a drizzle of its syrup.

Tips

  • Pour the syrup in last, down the sides of the hole, for dark ripples instead of an all-pink tubpint.
  • No amarena cherries? Sour cherries in syrup or good cocktail cherries work, chopped.
  • Chill the jar first. Cold cherries hold their shape better in the Mix-in.

Why it works

Amarena cherries are preserved in heavy syrup, so their sugar keeps them soft and chewy in the frozen gelato instead of freezing into icy pebbles.
