Steps
- Microwave 15 g full-fat cream cheese1 tbsp full-fat cream cheese1 tbsp cream cheese25 g full-fat cream cheese1½ tbsp full-fat cream cheese1½ tbsp cream cheese in a large bowl for 10 seconds to soften it.
- Whisk in 55 g caster or granulated sugar65 ml caster or granulated sugar¼ cup granulated sugar85 g caster or granulated sugar100 ml caster or granulated sugar⅓ cup + 1 tbsp granulated sugar, 1 tbsp glucose syrup or light corn syrup1 tbsp glucose syrup or light corn syrup1 tbsp light corn syrup1½ tbsp glucose syrup or light corn syrup1½ tbsp glucose syrup or light corn syrup1½ tbsp light corn syrup and 1 tsp vanilla extract or paste1 tsp vanilla extract or paste1 tsp vanilla extract1½ tsp vanilla extract or paste1½ tsp vanilla extract or paste1½ tsp vanilla extract until smooth.
- Slowly whisk in 120 ml whipping cream120 ml whipping cream½ cup heavy cream180 ml whipping cream180 ml whipping cream¾ cup heavy cream and 260 ml whole milk260 ml whole milk1 cup + 2 tbsp whole milk390 ml whole milk390 ml whole milk1⅔ cups whole milk until the sugar has dissolved.
- Pour the base into an empty tubpint, up to the max fill line. Put the lid on and freeze on a level shelf for 24 hours.
- For the shell, microwave 100 g dark chocolate100 g dark chocolate3½ oz dark chocolate150 g dark chocolate150 g dark chocolate5½ oz dark chocolate with 30 ml coconut oil2 tbsp coconut oil2 tbsp coconut oil45 ml coconut oil3 tbsp coconut oil3 tbsp coconut oil in 20-second bursts, stirring between, until smooth.
- Pour the shell into a narrow glass and let it cool until barely warm.
- Take the lid off, set the tubpint in the outer bowl and lock it into the machine. Run Soft Serve.
- If it looks crumbly or powdery, add 15 ml whole milk1 tbsp whole milk1 tbsp whole milk25 ml whole milk1½ tbsp whole milk1½ tbsp whole milk and run Re-spin.
- On the Swirl, fit the dispensing lid and press the swirl handle to fill each cone.
- Dip each cone upside down into the shell, lift it out and hold it upright until the shell sets, about 30 seconds.
To serve: Eat right away, while the shell is crisp and the soft serve is cold.
Tips
- Use refined coconut oil for a pure chocolate taste. Virgin coconut oil tastes of coconut.
- Dip quickly. The cold soft serve sets the shell in seconds, and a slow dip melts the swirl.
- Leftover shell keeps in a jar at room temperature. Warm it for 10 seconds to use again.

Why it works
Coconut oil melts at about room temperature, so the chocolate stays fluid for dipping and then sets into a thin, crisp shell the moment it hits the cold soft serve.
