  1. Tips

  • For a grown-up version, stir 1 tbsp dark rum or bourbon into the cooled custard. More will stop it freezing firm.
  • Freshly grated nutmeg tastes much brighter than pre-ground.
  • Save the egg whites for meringues. They keep for 3 days in the fridge.
