The formula
For one 473 ml16 oz (473 ml) tubpint:
- 300–360 ml milk, or a ready-to-drink protein shake
- 25–35 g protein powder, about one scoop
- ¼ tsp xanthan gum or 1 tbsp sugar-free instant pudding mix for body
- Sweetener to taste, plus flavour: cocoa, vanilla, a spoon of nut butter, fruit
Blend for 30 to 60 seconds with a stick blender or shake it hard in a jar, let the foam settle for 5 minutes, then pour to the max fill line. Freeze for 24 hours and spin on Lite Ice Cream (Light Ice Cream on UK machines, CreamiFit on the Swirl). For the Deluxe 709 ml24 oz tubpint, use 1.5 times everything.
Which protein powder spins best
| Powder | In the CREAMi |
|---|---|
| Whey and casein blend | The creamiest. Casein thickens the base, so it spins smooth and scoopable. |
| Whey isolate | Light and clean-tasting, but thinner. Add pudding mix or xanthan gum, or it can turn icy. |
| Casein | Very thick. Use the lower amount, or add a splash more milk. |
| Plant protein (pea, soy, blends) | Thick and sometimes gritty. Blend well and add a little fat, such as a spoon of nut butter. |
Flavoured powders are already sweet. Taste the base before you add more sweetener.
Why the first spin is powdery
Ice cream stays soft because of sugar and fat. A protein tubpint has little of either, so it freezes harder, and the first spin often looks like dry powder or crumbs. That is normal.
- Add 1 to 2 tbsp of milk to the tubpint.
- Run Re-spin.
- Still dry? Add another tablespoon and Re-spin once more.
To need fewer Re-spins next time, add 15 g cream cheese or light cream cheese, use a sweetener that softens (see sugar substitutes), or let the tubpint stand for 5 minutes before spinning. More help in texture help.
Ways to add protein without powder
- Greek yogurt: thick and tangy. Swap it for part of the milk.
- Cottage cheese: blend until completely smooth. It is mild and very high in protein.
- High-protein milk (ultra-filtered): more protein per glass and naturally creamy.
- Powdered peanut butter: protein and flavour with very little fat.
Mix-ins
Crushed cookies, chocolate chips and cereal all work. Spin and Re-spin first, then dig a hole down the middle, add 30 to 60 g of small pieces and run Mix-in.
