Re-spin
Re-spin runs the paddle through the tubpint again. Use it when the tubpint looks crumbly, powdery or dry after the first spin, which is normal for protein, lite and very cold tubspints.
- Add 1 to 2 tbsp of liquid: milk for creamy tubspints, juice or water for sorbets, plant milk for vegan tubspints.
- Run Re-spin.
- Still dry? Add another tablespoon and run it once more. Protein tubspints often need two.
Don't Re-spin a tubpint that is already smooth. Each run warms it a little, and it can turn soft and melty.
Mix-in
Mix-in folds chunks through a finished tubpint without blending them away, so cookies and chocolate stay in pieces.
- Spin, and Re-spin if needed. Mix-in always comes last.
- Dig a hole about 4 cm (1½ in) wide down to the bottom of the tubpint.
- Add 30 to 60 g of pea-sized pieces.
- Run Mix-in.
Getting mix-ins right
- Small pieces. Big chunks get stuck or end up all in one place.
- Not too much. More than about 60 g overflows or turns the tubpint into crumbs.
- Cold or frozen. Room-temperature cookie dough smears. Freeze soft mix-ins for 15 minutes first.
- Watery fruit freezes icy. Use freeze-dried fruit or a spoon of jam instead.
- Sauces like caramel or fudge are best swirled in by hand after spinning.
On the Ninja Swirl, skip chunky mix-ins in soft serve, because they can block the nozzle. Sprinkle toppings on top instead.
