Put the empty tubpint (or your pan) on the kitchen scale and press zero. Add each ingredient until the scale shows the number on the right.
Mix everything in one big bowl, then divide it evenly between 2 tubspints.
Steps
- Melt 20 g dairy-free dark chocolate2½ tbsp dairy-free dark chocolate2½ tbsp dairy-free dark chocolate30 g dairy-free dark chocolate30 g dairy-free dark chocolate1 oz dairy-free dark chocolate in the microwave in 20-second bursts, stirring each time.
- Blend 250 g silken tofu250 g silken tofu9 oz silken tofu375 g silken tofu375 g silken tofu13 oz silken tofu until completely smooth. - Blend again, pouring in the melted chocolate with the blender running, until silky.
- Pour the base into an empty tubpint, up to the max fill line. Put the lid on and freeze on a level shelf for 24 hours.
- Take the lid off, set the tubpint in the outer bowl and lock it into the machine. Run Lite Ice Cream.
- Expect it to look powdery after the first spin. That is normal for protein ice cream.
- If it looks crumbly or powdery, add 15 ml unsweetened soya drink1 tbsp unsweetened soya drink1 tbsp unsweetened soy milk25 ml unsweetened soya drink1½ tbsp unsweetened soya drink1½ tbsp unsweetened soy milk and run Re-spin.
- Still powdery? Add another splash of soy milk and Re-spin once more.
To serve: Top with fresh raspberries or a few cacao nibs.
Tips
- Use silken tofu, not firm. Firm tofu makes the tubpint grainy.
- Vegan protein powders vary in sweetness. Taste the base and add a little more maple syrup if needed.
- Oat milk works in place of soy milk, in the base and for the Re-spin.

Why it works
Silken tofu blends into a smooth, protein-rich cream, and soy protein helps emulsify the cocoa butter, so the tubpint spins silky without any dairy.
