Mix everything in one big bowl, then divide it evenly between 2 tubspints.

- Let the foam settle for 5 minutes.
- Pour the base into an empty tubpint, up to the max fill line. Put the lid on and freeze on a level shelf for 24 hours.
- Take the lid off, set the tubpint in the outer bowl and lock it into the machine. Run Lite Ice Cream.
- Expect it to look powdery after the first spin. That is normal for protein ice cream.
- If it looks crumbly or powdery, add 15 ml skimmed milk1 tbsp skimmed milk1 tbsp skim milk25 ml skimmed milk1½ tbsp skimmed milk1½ tbsp skim milk and run Re-spin.
- Still powdery? Add another splash of milk and Re-spin once more.
- With a spoon, dig a hole about 4 cm1½ in wide down to the bottom of the tubpint. Add 30 g walnuts60 ml walnuts¼ cup walnuts45 g walnuts90 ml walnuts¼ cup + 2 tbsp walnuts, then run Mix-in.
To serve: Top with banana slices and a pinch of cinnamon.
Tips
- The riper the banana, the sweeter the tubpint. Black-spotted is perfect.
- Toast the walnuts in a dry pan for 3 to 4 minutes until fragrant, then cool them before the Mix-in.
- Pecans work in place of walnuts.

Why it works
Very ripe banana adds natural sugar and pectin, which act like a stabilizer, so the protein base spins creamy with only a little added sugar.
