  3. Pour the base into an empty tubpint, up to the max fill line. Put the lid on and freeze on a level shelf for 24 hours.
  4. Take the lid off, set the tubpint in the outer bowl and lock it into the machine. Run Lite Ice Cream.
  5. Expect it to look powdery after the first spin. That is normal for protein ice cream.

  7. Still powdery? Add another splash of milk and Re-spin once more.

To serve: Top with a few more chopped pistachios.

Tips

  • Use 100% pistachio paste. A sweetened pistachio cream works too; leave out the sweetener.
  • For a greener color without dye, blend in a few baby spinach leaves. You will not taste them.
  • Allulose keeps it softest. Where it is not sold, sugar or another 1:1 granulated sweetener works.

Why it works

A little pistachio paste adds real nut flavor and enough fat for creaminess, and a drop of almond extract makes the pistachio taste stronger without extra calories.
