Put the empty tubpint (or your pan) on the kitchen scale and press zero. Add each ingredient until the scale shows the number on the right.

Mix everything in one big bowl, then divide it evenly between 2 tubspints.

- Let it stand for 5 minutes so the foam settles, then skim off any that is left.
- Pour the base into an empty tubpint, up to the max fill line. Put the lid on and freeze on a level shelf for 24 hours.
- Dig a hole about 4 cm1½ in wide down to the bottom of the frozen tubpint. Pour in 120 ml semi-skimmed milk120 ml semi-skimmed milk½ cup 2% milk180 ml semi-skimmed milk180 ml semi-skimmed milk¾ cup 2% milk, then lock it into the machine and run Milkshake.
To serve: Pour into a tall glass and dust with a little cocoa.
Tips
- A whey and casein blend makes the thickest shake. Plant protein works but turns out grainier.
- Taste the base before freezing. If your shake and powder are lightly sweetened, blend in 1 tbsp sugar or sweetener.
- For even more protein, use more of the protein shake in place of the milk at the shake step.

Why it works
Protein and xanthan gum thicken the base and hold on to water, so the Milkshake program turns it creamy and thick with very little sugar or fat.
